Cream of Silver Beet Soup

I have always had trouble preparing Silver Beet which could in any way be considered to be tasty. This recipe is not only tasty but packed full of goodness. If you can’t get Silver Beet then use Kale or Spinach (Serves at least 6)

1 bunch silver beet, trimmed
1 tbs olive oil (just use ¼ cup of water if using Thermomix)
1 large brown onion, roughly chopped
2 (400g) potatoes, chopped
2 cloves garlic, crushed
1/3 cup dry white wine
3 tsp Vecon or 2 low salt vegetable stock cubes
3 cups boiling water
1 tin (270 ml) Coconut Cream

Method (Thermomix):
Remove and discard stems from silver beet, roughly cut and place in TM bowl
Shred leaves for 5 seconds on speed 5
Remove from TM bowl and set aside
Place Onion (cut into quarters), potato (cut into quarters), and garlic in TM bowl
Shred for 5 seconds on speed 5
Sauté for 5 minutes at 100 degrees on speed 1
Add wine
Simmer for 2 minutes at 90 degrees on speed 1 or until reduced by half
Add boiling water, vecon (or stock cubes)
Simmer for 8 minutes at 100 degrees on speed 2
Add silver beet leaves
Cook for 3 minutes at 100 degrees on speed 2
Blend in two batches for 30 seconds slowly increasing speed from 1 up to 9
Return soup to TM bowl and add Coconut Cream
Cook for a further 2 minutes at 80 degrees on speed 4

Method (Conventional):
Remove and discard stems from silver beet. Shred leaves. Heat oil in a saucepan over medium-high heat. Add onion, potato and garlic. Cook, stirring occasionally, for 5 minutes or until onion has softened. Add wine. Simmer for 2 minutes or until reduced by half.

Place boiling water in a heatproof jug. Add Vecon or crumble stock cubes into jug. Stir to combine. Add to onion mixture. Cover. Bring to the boil. Reduce heat to low. Simmer for 8 to 10 minutes or until potato is tender. Add silver beet leaves. Cook for 2 minutes or until just wilted. Set aside for 2 minutes to cool slightly

Blend in batches until smooth. Return to pan over low heat. Season with pepper. Stir in coconut cream. Cook for 2 minutes or until heated through

    That was fantastic soup. Is it just me or is the thermometer more hassle than it’s worth? Conventional was pretty straight fwd

    • Thanks for the comment Rollo. I find the Thermomix just so convenient because everything is done in the one device and then at the end it is cleaned within seconds. But then not everyone has $2,000 to spend on such a device.
      Have you tried the “Raw Cacao Nut Balls with Mesquite” yet? Absolutely delicious and very moreish.
