Cacao Vanilla Nut Balls

They just get better and better and better. You must try this new variation on my Nut Ball theme. No Tahini but this time with Vanilla extract and Lecithin. No sugar, milk or nasty additives, just pure delight.
Again be warned, they are very filling and extremely more-ish.
Cacao vanilla nut balls

Ingredients:
200 gm raw cashews
50 gm brasil nuts
35 gm Cacao powder (* See note below)
10 Fresh dates (Make sure you pit them before using)
2 tsp Vanilla extract
Container of Desiccated Coconut

Method:
Place all ingredients into Thermomix apart from the desiccated coconut
Mix and chop for 50 seconds on speed 8
Form into balls and roll in desiccated coconut
Makes approximately 10 balls

If you haven’t got a Thermomix then you will need to use a powerful blender or food processor.

* Cacao:
Cacao is cold pressed without solvents so that the nutrients are better preserved than in cocoa. Organic Cacao has over 360% more anti-oxidants than regular cocoa, 21 times more than green tea and 7 times more than dark chocolate. Cacao does not raise blood cholesterol and has no caffeine. These balls are a good way to get some calcium into your diet as cacao powder contains calcium in usable forms.

I love having this type of food on hand for healthy snacks. Thanks for encouraging clean and pure food.

    • My pleasure. Let me know if you like them as much as I do won’t you?
It’s certainly very sunny here at the moment, 27 degrees and rising with clear blue sky’s. As I went outside to hang the washing up the cicada’s were calling and making a wonderful exotic sound.
Makes one feel good to be alive and healthy.
