I came up with this recipe for producing a wonderful ice cream consistency and creamy banana/vanilla flavour through trial and error during our present heat wave (high 30’s to low 40’s for the past 3 days). I hope you enjoy it as much as I have.
Don’t forget to buy those over ripe bananas and freeze them in readiness for this dish as well as the main ingredient in fruit smoothie’s.
Ingredients
4 cups Ice Cubes
3 Frozen Bananas
2 tsp Vanilla essence
2 cups Nut Milk or Soya Milk
¼ cup Raw Honey
Method (Thermomix)
Place Ice Cubes into Thermomix Bowl
Blend for 5 seconds on speed 9
Add Bananas
Blend for 20 seconds on speed 8
Add Vanilla Essence, Nut or Soy milk and honey
Blend for 20 seconds on speed 8
Serve immediately
Note: The Thermomix can handle ice cubes with ease but I am not sure of other devices such as a high speed blenders or food processors. Check out the manufacturer’s instructions before attempting.
The use of ice cubes is a key ingredient to the success of this recipe as it turns the mix into a wonderful ice cream texture without having to use an ice cream maker.
