I found this recipe in Brendan Brazier’s book, “Thrive Foods”.
It is so deceptively simple to prepare for a meal that is so tasty and nutritious. Just bursting with flavour.
Salsa
Ingredients:
1 cup diced plum tomatoes
1 tsp capers
1 tsp chopped black olives
1 tsp chopped fresh oregano or thyme or both
2 tsp minced red onion
1 tsp olive oil
½ tsp sherry vinegar
Pinch sea salt
¼ tsp black pepper
Method:
Toss all ingredients together and set aside
Spinach
Ingredients:
2 tbsp olive oil
1 tsp minced garlic
450 gms washed baby spinach
Method:
In a large skillet, heat the olive oil and garlic and toss the spinach until just past half-cooked
Season with salt and pepper
Finally, toss the Salsa over the spinach and serve
I cooked the spinach in my Thermomix but had to add it a quarter at a time, only putting the next quarter in as the spinach reduced in volume.
