I just stumbled upon this simple dish on The Renegade Health blog. If you haven’t visited this site you must do so. Not only has it got an enormous library of fantastic information about eating a whole-food, plant based diet and a huge number of brilliant recipes but most postings are in You Tube format with interviews and demonstrations of how to prepare each meal.

I used the following ingredients:
1/2 cup Millet puffs
1 spring onion Chopped
1/2 small red Capsicum
2 handfuls of fresh baby spinach
1/4 small carrot chopped
1 small mushroom chopped
1/2 Avocado chopped
1/2 tomato chopped
Sprinkle of Dulse flakes
A dash of Braggs all purpose seasoning
1 tsp Virgin alive oil
Pinch of sea salt
Serves 1

This looks like a fab lunch! What are millet puffs? Are they like millet flakes?
Sophie, I’m not at all sure. I was just looking for Millet in the health food shop and this is what I found. I’m sure any Millet or Quinoa or the like will do equally as well.
