Chocolate Ganache Tart
I found this recipe on the GlutenFreeGus.com blog and was intrigued by the title so I tried it, and wow! what a great result and so easy to make. I’ll definitely be making it again and again especially for friends as a way of tempting them into the world of Healthy Eating.
Ingredients:
Crust:
220gm pecans, walnuts or almonds (I used pecans)
170gm pitted dates
1/8 tsp sea salt (more or less to taste.)
Filling:
3 ripened avocados ā peeled and cubed (should have bright yellow-green flesh, not over ripe.)
½ cup agave nectar
1 to 2 tbsp Honey
3 tbsp Coconut oil
1 tbsp vanilla extract
Pinch sea salt
1½ cups Cacao powder
Method (Thermomix):
Crust:
Place nuts dates and salt into TM bowl
Process for 15 seconds on speed 5
Empty into 18 to 23 cm diameter prepared pan and press down firmly
Chill whilst preparing the filling
Filling:
Place avocados, agave nectar, honey, coconut oil, vanilla and salt into TM bowl
Puree for 20 seconds on speed 9
Add cacao powder
Mix for 10 seconds on speed 9
Spoon the chocolate āmousseā into the prepared crust, spreading evenly
Chill for 2 hours or overnight
Method (Conventional – Using Food Processor or blender):
Crust:
Pulse the pecans, dates, and salt in a food processor until the consistency of (rolled oats)
Press firmly into the 18 to 23 cm diameter prepared pan
Chill whilst preparing the filling
Filling:
Puree the avocados, agave nectar, honey, coconut oil, vanilla and salt in a food processor or blender until creamy smooth
Add a splash or two of water to help if the mixture is too thick to move
Add the cacao powder and pulse to blend completely
Spoon the chocolate āmousseā into the prepared crust, spreading evenly
Chill for 2 hours or overnight

I probably won’t try it Paul. As a diabetic, I’ve learned to sort of not think much about actual desserts, so I seldom make them at home. I get a treat now and then when I go out to eat, one piece and walk away, lol.
Nancy, is it type II or Type I? If it’s type II then you must read Dr Fuhrman’s new book “The End of Diabetes”. It’s a proven fact that you can be totally cured of it using nutrition only as long as your kidneys have not been hugely damaged by it. I just received the book last week. Paul

It’s Type II that I’ve controlled now for several years with diet and exercise. My blood sugars are always normal, a1Cs are good and I’ve learned how to eat an entirely different way. Had to push myself into that at first, but now for a long while it’s become second nature and I’m happy with what I eat, so I don’t feel like I’m missing out on things really. And I go a little berserk with a good treat now and then, lol. Thanks!

I cant believe we are on the same wave length! We had this tart exactly in a little café in Melb last week and came home and looked it up it was so delicious. It is the little orange Raw foods Thermomix Book, we agree it is really amazing in flavour. We have printed some recipes off for some of our owners who we know are interested in eating this style of food.

It not only looks good but it tastes amazing and is very rich. The pecan crust sets it off and adds a lot to the taste. You certainly can’t eat much in a single sitting (well I can’t anyway).
