After reading an article by Dr Joel Fuhrman stating that honey, maple syrup and agave nectar are almost as bad for you as refined sugar I decided to make an ice-cream with only whole dates as the sweetener. See the article Are “Natural” and Low-glycaemic Sweeteners Healthful Alternatives to Sugar?
I couldn’t have been happier. Just as sweet and very, very tasty.
Ingredients:
6 Medjool dates pitted
1 tray of ice cubes
6 frozen ripe bananas
1/2 litre of soya milk
3 tsp of vanilla extract
Method (Thermomix):
Place the dates and the ice cubes in TM bowl
Blend for 10 seconds on speed 10
Add all other ingredients
Blend until creamy on speed 10 using spatula to ensure the mix is fully blended.
Serve immediately
Method (Conventional):
Same as above but using a high powered blender or food processor. You may however have to alter the timing to achieve the same results.
I may have to rethink those pumpkin patch cookies I planned to make tomorrow.
