This is yet another variation on my nut ball theme, but this time the mix is formed into a much more presentable shape.
No dairy or sugar yet so sweet, nutritious and full of energy. An ideal snack for those engaging in very energetic pursuits.
Ingredients:
300gm raw cashews
200gm raw Almonds
30gm Cacao powder
12 Fresh pitted dates (I use Medjool dates). Make sure you pit them before using)
1 tbsp. Tahini (I use Tahini made from hulled sesame seeds as the taste is milder than unhulled)
1 tsp. vanilla essence
Ice cube tray for the mold
Method:
Place all ingredients in Thermomix, high powered blender or food processor and grind at high speed for 45 seconds.
Press firmly into an ice block container or any other mold to make the desired shape.
Using an ice cube tray – what a great idea! My daughter is eying these snacks right now. She spends a few hours each night at the skating rink, so these treats will come in handy.

That’s exactly right. Presentation is often as important as the taste. I’m making 4 batches for a Greens fund raising event tomorrow, so thought I’d try something different.
They will LOVE it! 🙂 For me, I’m thinking of the upcoming holidays – teachers’ gifts, etc. These treats are so much better than an ‘ol box of chocolates.
