I found this wonderful recipe on the Vegalicious website www.vegalicious.org
Ingredients:
2 cups chopped rhubarb
60 to 80 gms raw sugar
¼ cup water
1 banana
1 cup plain soy yogurt
1 tbs lemon juice
½ tsp ground cinnamon
Method (Thermomix):
Place sugar in TM bowl
Wiz for 5 seconds on speed 10
Add Rhubarb and water
Cook for 8 minutes at 100 degrees on speed 1 or until rhubarb has broken down
Allow to cool
Add banana & Yogurt
Blend for 30 seconds on speed 9
Add lemon juice and cinnamon
Blend for 5 seconds on speed 9
If you prefer a thinner smoothie you can add ice cubs or soy milk
Garnish by sprinkling with cinnamon
Method (Conventional):
Place water, sugar and rhubarb in small saucepan
Bring to boil stirring and watching carefully so that it doesn’t boil over
When the rhubarb is broken down, remove from the heat and allow to cool
Blend cooled rhubarb mix, banana & Yogurt until smooth consistency
Add lemon juice and cinnamon and pulse once again
If you prefer a thinner smoothie you can add ice cubs or soy milk
Garnish by sprinkling with cinnamon
