Creamy Banana Ice Cream (No Dairy)

Creamy Banna Ice Cream
I came up with this recipe for producing a wonderful ice cream consistency and creamy banana/vanilla flavour through trial and error during our present heat wave (high 30’s to low 40’s for the past 3 days). I hope you enjoy it as much as I have.

Don’t forget to buy those over ripe bananas and freeze them in readiness for this dish as well as the main ingredient in fruit smoothie’s.

Ingredients
4 cups Ice Cubes
3 Frozen Bananas
2 tsp Vanilla essence
2 cups Nut Milk or Soya Milk
¼ cup Raw Honey

Method (Thermomix)
Place Ice Cubes into Thermomix Bowl
Blend for 5 seconds on speed 9
Add Bananas
Blend for 20 seconds on speed 8
Add Vanilla Essence, Nut or Soy milk and honey
Blend for 20 seconds on speed 8
Serve immediately

Note: The Thermomix can handle ice cubes with ease but I am not sure of other devices such as a high speed blenders or food processors. Check out the manufacturer’s instructions before attempting.

The use of ice cubes is a key ingredient to the success of this recipe as it turns the mix into a wonderful ice cream texture without having to use an ice cream maker.

    • Sophie, The temperatures here have been in the 30’s and occasionally in the 40’s for the past 3 months, with not a drop of rain, so making smoothies and ice cream has been a daily routine for me. Especially appreciated after my now daily push bike training rides. You may have read in my blog that I’ll be doing a 2100k ride starting late April, from Maryborough Victoria (a town only a short distance from where I live) to Maryborough Queensland. This ride is for Alzheimer’s Australia though my previous rides have been to demonstrate the health benefits of eating a whole-food, plant based diet. Paul
