Pleasant Surprise Wholesome Soup

This began as a total experiment using whatever ingredients I had in the cupboard and it turned into a very pleasant surprise. The combination of sweet and sour/savoury gives an interesting flavour.
Where as I used blood plumbs for the sweet I’m sure any other fruit such as apples or pears would do the trick just as well, though I’m sure they will give a slightly different flavour and colour.

Suprise Soup

Ingredients
2 large onions
2 cloves garlic
2 large potatoes diced
1 medium swede (rutabaga) peeled and diced
½ medium sweet potato peeled and diced
¼ cup white wine
2 cups of vegetable stock (I use 2 tsp of Vecon in 2 cups of water)
4 blood plumbs
270 gm tin of coconut cream

Method (Thermomix)
Place onions (quartered) and garlic in TM bowl
Shred for 5 seconds on speed 5
Wipe mix down from sides of TM bowl
Sauté at 100 degrees for 4 minutes on speed 1
Add potatoes, swede, sweet potato, fruit, wine and stock
Cook at 90 degrees for 25 minutes on reverse speed 2
Blend for 50 seconds gradually building speed up to 8
Add coconut cream
Mix for 20 seconds on speed 5

Method (Conventional)
Sauté the finely chopped onions and garlic in a medium sized cooking pot for 5 minutes until translucent
Add potatoes, swede, sweet potato, fruit, wine and vegetable stock
Bring to the boil then let simmer on medium heat for 25 minutes
Blend in high powered blender or food processor
Add coconut cream and mix thoroughly

Serves 5 to 6
