Sweet Potato Black Bean Burgers

It’s so nice to find a burger recipe that is not only healthy but also really tasty. This is from Dr Fuhrman’s “The Eat to Live Cookbook“.

I think this is going to become a favourite of mine. Go on, give it a go, you’ll be so glad you did.

Sweet Potato Burger

Ingredients:
1/3 cup raw cashews
1/3 cup raw pecans
40gm (15oz) can of black beans, drained
3/4 cup baked sweet potato, mashed
1/2 cup diced red onion
1/2 jalapeno pepper, deseeded and diced
3 tbsp. chopped coriander (cilantro)
1 tsp. garlic powder
1/2 tsp. black pepper
1 tbsp. cider vinegar
2 tbsp. fresh lime juice
3 tbsp. nutritional yeast
Small amount of olive oil or olive oil spray

Method:
Preheat the oven to 180 degrees C (350 degrees F)
Place nuts in Thermomix, Blender or food processor and grind to a fine powder.
Add remaining ingredients except for olive oil, and pulse to combine.
Form mixture into 6 burgers.
Place on a baking tray that has been rubbed lightly with olive oil.
Bake for 30 to 40 minutes until lightly browned. I flipped mine over half way through.

Serve with avocado, tomato, and red onion slices
