“Brazil nuts are one of the best sources of selenium, a mineral that is otherwise hard to come by naturally. Selenium is like the rebar on a high rise—it’s the reinforcement for one of the body’s most powerful antioxidants. The coconut butter isn’t essential, but it’s a healthy addition that provides flavour and richness. The lecithin gives the milk extra smoothness.” – Raw Food Real World
“This milk is sweet, natural, and really good for you.” —Matthew Kenney
Ingredients
1 cup raw Brazil nuts, soaked 2 hours or more
4 cups filtered water
1/4 cup agave nectar or raw honey
2 tbsp coconut butter
1 tbsp vanilla extract
1 tbsp lecithin (optional)
2 tsp stevia
Pinch sea salt
Method
In a Thermomix, Vita-Mix or high-speed blender, blend the nuts and water on high speed for about 2 minutes, to make sure the nuts are thoroughly blended.
Strain the milk through a nut milk bag or multiple layers of cheesecloth twice for smoothness.
Rinse the blender cup and place the milk back into it with the remaining ingredients.
Blend to combine thoroughly and taste for sweetness.
This special nut milk sounds amazing! I love making my onw nut milks too, especially with almonds or cashews! Home-made cashew milk is my favourite 🙂
